quick and easy microwave vegan strawberry mousse





1 quart strawberries
1 container silken tofu (i used light)
1/8 to 1/4 c agave nectar (depending on the sweetness of the berries and your taste)
3 T maple syrup
1 1/2 T cornstarch
1/8 c cold water
1 t vanilla

wash, hull and halve strawberries. put in microwave safe container along with the agave nectar and microwave 3 minutes. stir and microwave another minute. a helpful hint is to put the container on a microwave safe plate in case of spillover. i also loosely lay a paper towel on top of the strawberry container to avoid spitting.

mix the cornstarch, water and maple syrup in a cup. pour into the strawberry mixture and microwave another minute. stir. if it's thick take out. if it's not thick yet, microwave another minute or so.

when thick take out and stir in vanilla.

in a blender (i used an immersion blender) blend the tofu and strawberries (if using a regular blender you may have to do it in two batches AND watch out for the heat) until smooth. put back in micowave safe container and microwave another 2 minutes. take out, cool and refrigerate for a few hours before eating.

note: if you'd like to bite down on some berries, reserve a few. cut them in half or quarters and mix them in at the cool and refrigerate stage
top with berries or cherries or chopped nuts.
