VERY EASY chocolate peanut butter spread



1 to 1 ½ C chunky peanut butter (i happen to use whole foods organic unsweetened)
¼ to ½ C sweet stuff (i use a combo of maple syrup, agave nectar and brown rice syrup)
1/8 C cocoa powder
optional: pinch of ginger, or cinnamon or clove or nutmeg. raisins, slivered almonds, diced dried fruit

note: measurements are APPROXIMATE. i really do NOT measure anything ever

put sweetener in a very tall micro-wave safe bowl or glass. nuke (on high) for at least 1 minute but NO MORE than 2. keep your eyes on that bowl at all times. it WILL boil over – so catch it as soon as it starts.

mix all ingredients and put in a container and store in your fridge. it will get a bit harder than plain peanut butter. it’s grand on fruit or pancakes or english muffins (picture is of whole grain muffins, the peanut butter mix and vegan sour cream. i wanted to gussy it up by slicing some fruit and placing it around the plate, or at least CLEANING the plate of crumbs. but hell, let's face it. i was STARVING as usual and just wanted to devour the stuff. so click, i took a quick shot). it’s even good to eat as candy. just roll the cooled mixture into little balls. you can then roll them in powdered cocoa or unsweetened coconut or crushed cereal of your choice or a mixture of a spice and dried maple syrup/sugar. use your imagination!
